You say this is the first time that you have made maple syrup, tell us more. How many taps , and how do you boil it down? I made syrup ever year till I was 42, and really enjoyed it. I moved to a new farm in the spring of 04, no maple bush here. We would put out 200-300 taps, all buckets, and boiled it over open fire, in large kettles/pots. Think of potash kettles , and you get the idea. Our syrup was always dark in colour, compared to the stuff that comes off of evaporator pan, and had a taste of wood smoke. We made it like the settlers did, or I could say , the same way , in the same kettles my Great Grandfather had. Bruce
