Check the laws in your state. In NY it is legal to have food plots, also legal to cut and leave branches for them. If you place corn, apples, etc., and sit in a stand over the area, it's illegal. If I recall, one reason is leaving piles of grain etc. is a method of spreading disease. Past October and archery season, plots may or may not be less than desirable to them, at that point it might still be part of their daily pattern, but less of a draw than when the growth is most desirable. Most of it will tan out by that time anyway.
