Just take a cruise on YouTube. There are loads of helpful videos. Some use apple juice, some do what you have done, some use yeast and some use natural yeast in the air like the old timers. It does sound like an interesting project to try. If you want to do what 5he old timers did to up the power of their jug o joy. Let mother nature freeze the juice when it has finished. Or stick it in your freezer. The water freezes out and leaves the alcohol behind. You can double the proof darn near.
