The re-sale value of old tractors isn't high enough to make money restoring them. However I would think that there are plently of unavailable or high priced tractor parts that could be made in a machine shop and sold at a profit. I've gone to the machine shop and welder to have a few things made in recent years. Advertise here and on other tractor web sites, and I'm sure you'll find people how need something made or know of parts that are in demand. Offhand, I know that a GOOD top link bracket for the AC WD/CA 3-point conversion doesn't exist commercially and I have plans for one I had fabricated based on the original AC design.
