It is amazing that engines will run with pretty nasty filters/fuel in them. It is easy to miss things when you have multiple engines/tractors/vehicles to take care of.
We have pretty extensive service records and we still miss things on some equipment. It usually is equipment that is not used a lot of hours each year.
My JD 5210 is one of these. It gets used everyday about, but it is just for a few minutes. I have owned it for 15 years. I think we have put 800-900 hours on it in that time. Five or six years ago, right in the middle of a really cold snow storm it died. I thought gelled fuel. It was nasty stuff above the fuel filter in the primer pump that looked like a hockey puck. Like you I could not remember having changed the filter since I first serviced it when I bought it.
So I am glad your issue with your Ford 1520 was a simple one to fix.
