Robin Hood,
Google it... and click on the link for mayoclinicDOTorg. They always have good descriptions/explanations that are understandable to a lay person... though they are not certain what causes it.
One of my older sisters has Celiac Disease, so I'm slightly familiar with it.
Celiac disease can cause other problems with one's body - so it is really important to eat gluten free. You will need to educate yourself and REALLY read labels/do research about foods and beverages.
Did doctors diagnose you via a biopsy of your small intestine? Doctors told my sister, a biopsy is the only way to 100% verify Celiac disease. Two blood tests had given false negatives for my sister. When her intestinal upset became very extreme and prolonged - they finally did the biopsy, and verified she had Celiac Disease.
A LOT of things contain gluten - things you'd not suspect: condensed cream soups and other condiments often contain gluten, spices sometimes contain gluten to help them "flow" when sprinkled. Foods containing any wheat, barley or rye contain gluten.
You must use a separate cutting board from your wife, for preparing your foods.
Regular beer is "off the table", as it contains gluten - as do any liquors made with wheat, barley or rye.
You are fortunate in that their are many more gluten-free products available in stores these days. Back when my sister was diagnosed, there were very few things available... except at one special food store. These days, even our local small town grocery store has some gluten free products.
It's tough to deal with and make the dietary changes... but you can do it! Go, Robin. Go, Robin. Go, Robin!!

On our first cosmetic restoration, not having a manual, we carefully marked the wires, taped the magneto in the position it came off, and were careful not to turn the engine over while we had these components off. We thought we could get by with this since the engine ran perfectly and would not need any internal work. After the cleanup and painting was done, we began reassembly and finally came to t
