It is not a big deal. I was diagnosed in 1998. My wife changed her way of cooking. To make gravy use corn starch instead of wheat flour. She made bread for me that was a real challenge. Now all you have to do is go to the grocery store and buy it off the shelf. If you need a good all purpose gluten free flour and I recommend Namaste. Pamela makes a good flour to make hot cakes. We have not found a flour that makes a good sour dough hot cakes. You want it my wife can make it gluten free and it tastes great. When I found out that I had the disease I weighed 125 pounds. Now I have to watch what I eat because you can put the pounds on if you want to, now 160. I actually prefer the gf pie crust that she makes now. One thing you will notice is that gf costs more. Bud
