Grew up in a small town....an urbanite. Dad had a restaurant specializing in Prime grade, KC aged (2 weeks just over freezing temp) Angus beef. Local barber, fellow church menber, son and I went to the same schools liked to come and have a steak. Dad had a specially designed, grill built with holes drilled in it to let some flame through, in an arc so drippings would collect in troughs on either side of the grille which he used as part of his special recipe steak sauce, hickory open flame below........
He forgave all that high tech for a NY strip on a pair of tongs, over an open gas grille off one of the big gas ranges in the kitchen (like the burners in your house kitchen but commercial sized). Hold the steak till seared on one side, flip it over sear it again, move tongs and repeat, flip it onto a pre heated plate and out the door it went. He called it his "Blue Steak".
Bit too rare for me. I liked med rare on mine and preferred the Rib Eye....not the Rib Steak, but the "eye" of the rib steak....another of his house specialties.. The steaks were marbled really good and cut about an inch thick....he had a butcher block, walk in just below freezing cooler where he had quarters hanging, customer selected his slab of beef, dad put it on the cutting block, put his knife on the meat and looking at the customer, started moving the knife over (selecting the thickness) till the customer nodded. Cut sucker and off to the grille.
Anyway, back to the story, you cut off a chunk of that and bite down on it, squishing the fat juices out of it and it it was best thing this side of heaven......mmmmmm good.
With that he served a 21 veggie salad, Italian type dressing with blue cheese, his recipe (which he marketed in super markets), with crackers and pats of butter, risen twice home made rolls, large baked potato with all the trimmings and a cold beverage of choice. Mmmmmmm good.
