Yes I had a 97 Ford F250 powerstroke for almost all the 5 years I lived in Kansas. I miss the ultra fast governor response while the e40d was shifting up and down. I taught this was quite unique and impressive from the first common rail diesel.
Mine did not have a goiseneck hitch but I tought making one so I could rent a bigger trailer. My plan was to remove the bed and put the support under the bed. Your way is much simpler but on mine the bed was attached to the chassis with rubber mounts, so it would have been difficult to sandwich chassis and bed.
It is your truck and you are excellent driver.
But as a mechanical engineer, I have to warn you against what kind of forces that may be applied to your hitch.
Now, if you are as strong as others, do not worry. And checking bolts tension after 10, 100, 1000 miles is always a cheap insurance...
