I will add a suggestion of purchasing a laser IR thermometer you can get them at auto parts stores, hardware stores and home improvement centers. You can get one for $20 - $30 see example in link. Then take a reading on the thermostat housing and compare it to your gauge. It may be the gauge is not reading correctly and the engine coolant is at a higher temp than it is telling you. Which means it could need some of the actions performed to correct the issue as suggested by Jim. And also the gauge repaired to read correctly.
