Almonds have been used as milk for thousands of years, and in fact was used as a milk substitute for feast days in Medieval Europe when dairy products were forbidden. The term Almond Milk first appears in 1390 in some English texts.
To make almond milk- soak one cup of almonds in one cup of water overnight. Drain the first water (you can save it and use it in other recipes) add soaked almonds to four cups of water and grind up in a food processor etc. for 4-5 minutes. Strain in cheesecloth and you have a very white liquid that looks like.............milk, and can be substituted for.................milk.
The problem with the population, is instead of looking something up (that lifetime of learning that teachers try to instill in their students) people use what we already know, form an opinion and spout it out on these forums etc. as personal facts limited by our own personal knowledge.
The best thing my poor parents ever did was buy us a set of encyclopedias from a traveling salesman. If we had a question during supper, and dad didn't know the answer, we were instructed to get the correct volume by letter, and he would do his best to find the answer.
Life experiences are great, and can be very useful, especially on this forum as there are many ways to skin a cat.........but when we substitute our opinion through experience as fact- that just creates misinformation.
I am not disparaging the dairy industry- if I win the lottery I will farm 240 acres and milk 40 cows for the rest of my life, and give up teaching to make a living.
