Around here, standing grass hay for some people is put up on half. Landowner gets half the bales, and the person that puts it up gets half the bales for putting it up.
If landowner is not interested in/don't have a use for the hay, they generally offer thier half to the custom hayer for regular market price.
If you want to sell all your hay standing in the field, then ask for half the market value of the bales. If that's $100 a ton, then ask for $50 a ton. They put it up, take all, and you get $50 a ton for all of it. You want the entire $100 a ton, then you go buy a swather, tractor, rake, and baler, and just knock yourself out.
