Mine is 16 x40, and to narrow. I think 24 x 40 with 12' door would be perfect. That allows for 4' for machines and bench along the wall, and 16' left to work in. With 40' long I can have a project tractor in the back, and still get the daily disasters in the front. If you go bigger it will fill with junk! Build a shop not a junk shed! Gut the stuff in get it fixed and get it out. If you're talking farm shop and have to get a combine or duals in with multiple projects all at once while you wait for parts triple the size.
