Portersville (Pa) show has a nice setup (grandpap & dad built most of it, so I might be biased). a heavy bracketed countershaft hooked to a pair of bolens walk behind garden tractor clutches, the clutches (set to slip rather easily) run the freezers. (total of 4 freezers, so one or more can be mixing while the others are being emptied and cleaned, and you can turn the individual freezers on and off without stopping the engine). They run this all day with an Allis B or a case VA or even a small Deere (depending on the feature)...the tractor is just loafing at idle, but anything that tends to overheat is a bad choice.

The BIG things to remember are the freezers want to turn SLOW, plus you need to provide a way that the drive can slip AND a pretty weak (brass?) shear pin on each freezer in case something jams. Generally the gearing, brackets and all that on the freezers themselves is quite light, and VERY brittle when cold......spending half the night brazing a busted freezer drive back together for the next morning ain't fun.

As I remember the belt pulley on the countershaft was about 24", the chain drive to the bolens clutches about 1:3 (limited by the bolens castings) and then the sprockets on the freezers are about 15".

Of course, if you build it, and then intend to sell your wares, then the state health department may want to inspect you and all that fun stuff.
