It depends on which kind of thistle. If it is a perennial, like Canada thistle, the cutting will take care of the seeds from the first cutting, but the plants will quickly grow back and produce more. It reduces the quality of the hay, but cattle seem to eat it OK. The stickers are not much fun to handle. In the short term, I would cut the crop early. Then I would talk to the County Extension agent or some other knowledgeable source to see if there is any chemical that will deal with the thistles while sparing the alfalfa. There may not be. I have Canada thistles on my property as well as some other kinds. Tillage just seems to spread the Canada thistles. I have had some success with spot treatment with roundup, which of course kills just about everything. Thistles are hard to get rid of once they are established.
