This is one of those cases where you really do get what you pay for. The experience and expertise to do earthwork is learned through time and repetition under a good master. Ask yourself this question: Do I want my yard to look like I did it myself? The machinery involved is expensive and hard to operate correctly to obtain the results you desire. If you finally can't get the results you want you'll still need to hire it done. I would sign a contract with the landscaper specifying the exact results you want, the time limit, materials used, and proof of insurance. This is my opinion only, don't rely on it for your desires.
