In regards to cylinder head bolts, in both cases the fastener stretches (shaft is in tension) a given amount to hold the assembly together. If your using a bolt the bolt has to turn as well as stretch which is more difficult than a stud which just has to stretch. When torquing a bolt (due to thread friction) it is very possible the bolt will twist a bit and actually give you a false torque reading. This is why threads must be very clean and a light lube used on the threads before installing the bolt. Note: When installing a head apply a very small amount of lube to the threads on the bolt as too much lube could get between the head and block. In either case, the threads should be clean and a light lube should be applied to the threads. I have personally never done a study to see which one was more reliable if torqued properly.
