The excuse I used to hear was that you would restore compression lost to worn valves and that would do in the bottom end. I have done valve jobs on Lots of engines with that kind of miles with good success. Kind of silly to take the head off and NOT do the valves at 120K. Unless you plan on getting rid of it right away. What you have to do is be honest with yourself about the condition of the rest of the motor. Valve grind and guide seals will do wonders for a old motor for a while. A compression test and a cylinder leakage test before teardown would have given you a good idea as to the engines condition and what it needs and /or will tolerate. Good luck and Merry Xmas!
