Unwatched pumps do sometimes get stolen right out of wells. What you might consider doing is building an underground vault for your pressure tank and controls. You could set it up with a very heavy concrete lid that would need to be lifted with a strong loader. If you did it right, such a "pump house" would also protect your equipment from freezing, if that is another worry. Everything I have ever read said that submersible pump controls should be as near as possible to the well and pressure tank. Another thing that can help make a submersible pump harder to steal is by using heavy metal pipe in the well and welding down the casing cap. A well can be camouflaged, but somebody out there already knows where it is. The overall best solution is to have someone nearby watching it. Good luck!
