If your fields are perfectly flat it will make no differance, except you might want to choose a direction which will give you the longest rows, makes for less turning around at the ends, and would be more efficient. Here in the midwest, most of us don't have that option, we have to plant the crops on a contour to follow the lay of the land, so to prevent soil erosion. Basically, always plant so the rows are diagonal to the direction the water will run when it rains, never plant so the rows are running straight up and down the hill. This makes for some very interesting patterns.
