well the one thing im surprised no one has mentioned is that sheetrock has much better fire resistance than wood, this may or may not be a big concern depending on what you plan to do in the garage, also if it is attached to a house many times code calls for sheetrock on the wall between the house and garage. if it were my garage i would want sheetrock but its your call
