Tim: I have the same truck w/six speed, which means the engine is the HO version (245 hp, 505 ft/lbs). I have made similar trips to Texas, Ark, MO and back through Colo to AZ with my trailer and goodies. You have plenty of power. The only weak spot is trailer tires. If you don't already have them, put the biggest 10 ply tires you can get on the trailer. These trucks are rated to gross 20,000lbs, which means you should be able to handle 10,000 lbs or so depending on what your trailer weighs. IMHO the Cummins engine can't be beat. Power will not be a problem.
