Farmall C's had a C-113 engine officialy. Super C's had a C-123. Super C model run started in 1951. I never heard about 500 C's that had 123 engines, but knowing how IH did things, It's possible they did put C-123 engines in some late C's. Who Knows? Super A's also had the C-113, but some late Super A's did have the C-123, even though I don't think it was "official" until the Super A-1's came out. It's also quite possible that someone rebuilt your C using thinner sleeves that allow the use of 3-1/8" pistons. My 1940 B has aftermarket 3-1/8" pistons in it's C-113 engine, that was common practice on rebuilds for many years. It might add a couple horsepower on a dyno, but it's not likely that anybody would notice much difference in how it works in a field. To be a true Super C, it also has to have the taller radiator, disk brakes, curved pedals and faster gearing in the transmission too.
