It has to do with the way OK was settled. Remember that the government gave away land to the people and that everyone was supposed to line up and wait for a specific time and then everybody raced to plant their flag on a plot of land on a first come-first serve basis. People who crossed early and were caught could be shot.
Unfortunately, many people DID get over the line early and were not caught. My history lessons taught me that those who got over the line to "SOON" ended up with a lot of land and were hence the people who settled OK...."SOONERS"
