Ford 3400 hydraulics

I have just bought a 3400 diesel ford tractor. I'm not sure where on the tractor the hydraulic fluid level is checked. There is a cap on the side of the casing just above and in front of the brake pedals, that just screws clockwise until tight and also counter clock wise unil it becomes tight again. What is it for ? Also there is what looks like a doorknob that pulls out, it is located on top of casing just in front of the seat. What is it for ? The person I bought it from has a book on it for me, but hasn't found it yet and I'm anxious to know more about the tractor like a kid at Christmas, Thanks for any help you can give me.
