Possibly the old filter was heavily restricted due to not being changed and it was holding your oil pressure down. The new filter may not be offering the resistance hence you have a higher oil pressure reading. Additionally the new oil could be of a different weight than what the previous owner used creating a difference. I have an old cat 955 and it pegs the oil gauge when first starting until the engine warms. After warm up it registers full scale at operatiing speed. I would be more concerned if the oil pressure was low.
