With either cows or goats if you can find someone with hogs, or if you'd like a couple of hogs you've got a good use for the surplus. Pork from milk fed hogs just can't be beat. When I was in highschool a friend of mine had hogs, and they prefered goat milk, but they weren't all that choosy.
