Always set a date. Whether or not you elect to require a deposit, set a delivery date. Last March I found a pair of wheels for my F12 up in IN. I told the seller that I would not be able to pick them up until sometime around the first week of July. I offered to pay the full price up front, he told me that wasn't necessary because he was confident he would be able to sell them to someone else if I flaked off. I told him I just wanted to make sure they would be there in July. I showed up June 30, got my wheels and a few other misc. parts. The key here is we communicated, we both stuck to our plan and we were both satisfied witht the outcome. Incidentally, if you require a deposit, provide the buyer a written receipt stipulating that the deposit is non-refundable. Keep a copy for yourself. I've done this a few times when selling cars over the years, you'll find it sorts out the serious buyers really quickly.
