Vickers used to publish a Mobile Hydraulics manual which goes more into series and tandem center valves than their industrial manual does. Maybe the Deere publications touch on that. J C Whitney used to sell a book on Diesel engines that was a good introduction. The Deere stuff would be a good place to start but they may not get into the Cummins pressure-time approach or the Lanova energy cell stuff that M-M and I think Allis once used. You might see if your library can get you a copy of Lichty or Oberts texts on I.C. engines if you're really curious.
