Corn Problems

Hello, New to this corn thing. I planted several rows of silver queen sweet corn. I looks good. How do I know when it is ready? Also there is a mold or fungis on some of the ears. I have pulled these off. Is there any cross contamination with this what ever it is? Thanks For your help.
