The part of the carburetor throat that narrows down, after the choke plate & before the throttle plate. The main jet outlet normally sits in the middle of the venturi. Narrowing the throat increases the speed of the air flowing through it, reducing the pressure (the venturi effect, named after the guy who discovered it) and thereby sucking gas up out of the bowl. Same principle as an airplane wing where air has to travel further, and therefore faster, over the top of the wing, resulting in reduced pressure compared to the air flowing over the bottom of the wing.
