I do tomato juice, sometimes my wife helps, but usually it is just me. I start by washing the dirt off, cut the big ones into smaller pieces, and then drop them into the blender. Run the blender just long enough to sort of puree them. If I want the juice for chile, I will drop one whole jalepeno pepper in for each blender full. Next, strain the whole mess through a collander and into a large kettle. Place the kettle on the stove and cook until you have tomato juice. Pour the HOT juice into jars and screw the lids on. You're done. I do not pre-heat the jars, and I do not pressure cook the juice. Now all that's left is to clean up the mess and throw the pulp out to the chickens or hogs if you have any.
