We do canning here too. Put up 54 pints of beet relish with garlic a few days ago. Today our son came over with 24 lbs of venision, we ground it up and put in a marinade, tomorrow we will run it through a jerky shooter and into the smoker at 200 degrees for 2 + hours till done. Will use hickory for some and mesquite for another batch. We also jerk strips and can some. Oh, we have about 20 qts of tomatos and 10 juice put up. No beans this year. Salsa is next. Bob
