My opinion for what it's worth is to go no less than 14ft. That way it would work nicely for stacking big square in down the road. 14ft is about minimum for modern machinery too. As far as round bales go, you'll get alot more bales in if they are set on flat end instead of in a pyramid, but after watching the neighbor it looks like a pain. Three rounds set on end would be 15 high with the round balers around here, so I would go 17 or 18 tall. If your serious about small square(I won't use my other term) then take the advice below and build for a NH bale wagon.
