JC Whitney has reasonable priced adjustable fan control switches of a few types online...
If I remember correctly one even hooks into the radiator fins... Getting one for my tractor, replacing the mechanical fan with an electric one, so I can reverse it in summer to blow forward. also handy to clear some chaff from the radiator.
