You might want to be careful about butchering your self and taking somewhere else to get it cut up, There is a guy that used to do that for his family. USDA threatened to take him to jail for butchering for anyone but for his own use on his own farm! He was GIVING it to his old maid sisters. Not selling it, giving it away. He did not have the proper permits to do this, so be careful of who you tell this to and check with the local shop and see if they will cut the quarters up after you butcher it. As for pricing, look at the local stockyard prices, then adjust it according to how much it was on hoof compared to hanging weight and adjust accordingly.
