take the valve cover off. then unbolt the rocker arm assy. The valve springs will push it up as you loosen the nuts. Lay it in the valve cover. Then pull out the push rods. The old timers will tell you to keep them in the right order but it realy don't matter. throw them in the valve cover too. Next take off the nuts on the head studs and throw them in the valve cover. See where I'm going with all this? if you keep all the head realted stuff together it will be easier to put back someday. and the stuff wont get lost. You will also probably have a small water manifold on the front of the head to take loose. And mabe a crankcase vent tube at the rear? Anyway when you get everything loose the head should wiggle loose easy enough. You can leave the manifold on for the time being, Just unbolt the carburetor. Try not to break anything.
