I beleive it's holstein steer beef if I'm not mistaken, but leanness was the primary reason. I discovered that bit of information while reading about grass fed beef. Anyone that thinks that grass fed beef is inferiour hasn't spent much time researching the subject. There are certain ways of making it work. When I look at what's involved with it I doubt it's much cheaper than our confinement system either. It's just a different idelogy. It's funny how people around here like to preach about the market always being right... when it agrees with their beliefs, and when it doesn't, condemn it all to hell.
