I would imagine the reason you missed the water in the oil is that it was doctored in the radiator with liquid glass and it was'nt there when you looked. A crack like that and the water leak don't just happen in a minute. Yes the head will repair nicely in most cases. Something else you might want to do since you have the head off anyway is to go ahead and have the newer hardened valves and valve guides put in it to compensate for the no lead gasoline.
