Some replacement seats are universal fit all types, approximate sizes that the head is milled out to fit. If they aren't sure about hitting the water jacket, I think I'd look around for another machine shop. If the water jacket is cut into you'll be looking for another head in all likelihood. However the combustion chamber part of the head surface is quite thick, so if all come to naught, maybe the way to go. See if you can find a shop that is more ag related, or someplace that another case owner can suggest. If you just got to lap the valve in, suggest you get all the compound cleaned up before final assembly as it can continue to cut the face, and the new seat.
