There are many classic garden tractor books in print, as well as many websites that deal with the histories of the many garden tractor companies.
I've been collecting one, two and four wheel garden tractors for 40 years and have over 150 of them. Also have over 50 full size tractors.
In regard specifically to the Simplicity 700s? Price is a funny thing. It all depends on who wants it, how bad, and where. I've got three 700s and the highest I paid was $100. One was free. That $100 runs perfect, was always kept inside, and came with all the OEM owner's manuals and sales brochures. I'll add though, that I live in a farming area and this kind of stuff is still common. For years, old garden tractors brought next to nothing at equipment auctions, but lately I see more interest in small tractors.
For printed books, try at least: "Farm Tractors 1890-1980" by Wendel, "Garden Tractors 1920-1956 Vol 1" by King, or Volume 2 1919-1977, or Volume 3, 1919-1908, or "Garden Tractors" by Barber.
Also, the older annual farm equipment publications like Red Tractor Book, or Implement& Tractor have a wealth of information on old gardent tractors. I have almost every one printed.
