john, these are calles sheepshead or also hen of the woods. they only grow on oak trees, and look like a pile of brown oak leaves or kind of like the head of a sheep. here in illnois, they come out after a couple days of rain to get the ground good and moist. from about mid september thru haloween they can be found. when picking, use a sharp knife, long blade and slice the base, leaving just a few of the leaves so they will return next year, dont just rip them off the tree. you can then mark the tree so next year check those trees first. i rinse them good in a 5 gallon bucket with a hose to get the insects off, then slice them into about 1/4 inch slabs. from there about 2 minutes max in boiling water to clean them, then remove them and let drain. from there they can be frozen, or fried with steak and some gravy, or make mushroom soup from them. they have a strong mushroom flavor, if using them for pizza ect, a little can go a long way. next to morrels, these are prolly the most hunted around here.
