What you need is 40 degrees F and 90% humidity for best conditions to store potatoes. Thats why dirt floors were critical to old root cellars, to keep humidity up. Its also best to keep apples in another cellar since the gas they give off will encourage potatoes to sprout. To get really good home fries, peel the potatoes the night before, store overnight in water (or vodka) to take out as much starch as possible, then fry them up in oil that is very hot.
