Pressurizing a radiator system has the same effect as a pressure cooker, it allows you to keep the liquid inside in a liquid state to a higher pressure and thus temperature. Depending on the cooling system load, lack of pressurization may not be a problem, but you have to keep the system FULL. Without pressurizing the system, the coolant can and will cook off.
