We used to use a corn, oats, alfalfa rotation for the following reasons. 1. Plow down the old alfalfa and plant corn in its place to give the field a break from alfalfa. 2. Plow down the corn stubble and plant/sow oats the following year with alfalfa seed planted with the oats. Oats w/alfalfa can be planted very early. Both very tolerant of cold weather. 3. Oats comes up fast and provides "cover". Alfalfa starts to come up and oats becomes "nurse". 4. We used to let the oats fully ripen. The horses, you know. Cut it in late July or early august. Nowadays people put oats in silo (sometimes). 5. Alfalfa is on its own after oats is taken off. Leave alfalfa in field for as many years as it is healthy. When it thins out or gets spotty, start the whole cycle all over.
