some have adjustments at the slave cyl.. others have adjustments at the master cyl.. some need to be bleed to get the pedal height back, Others must be rebuilt when it drops down to the floor level, but you have new slave and master...
or could be the pressure plate is wierd/worn along with the disc..
Try to adjust, try to bleed, it it doesent slip, live with it.. if it does slip, rebuild everything including pressure plate. check fork and new throwout bearing in the process. check pilot bearing while there.
