Jack - You don't want to cap off the pump so it's running without oil. There's bearings and a gearset in there that'll fail in short order. No problem however plumbing a runaround loop to the pump using the old reservoir tank as you suggest. Another alternative: Remove the hydraulic pump and replace it with a distributor extension housing/shaft from a non-live hydraulic equipped M or SM. That'll permit you to remove the hydraulic pump and reservoir completely - probably 150+ lbs savings. And if the live pump is still good it should be no problem selling it for a couple hundred $ - seems people are always looking for good live pumps.
