Head work

Since I've pulled the head from the regular its now time to see about getting it hot tanked. I've never done this before, so I'd appreciate some advice. The engine was rebuilt just before the tractor was parked and really the biggest problem with the head now is the squirrel damage from the seeds stored in the valves. I'm hoping the tanking would get all that crap out. I've heard talk about replacing the seats. I don't have the slightest idea what that means or how I'd get them out. I've also heard that they could be damaged by the tanking process. Any advice there? Should I pull the studs out of the head before I take it in? I got almost all of the manifold studs out whole (broke one) so I'll be getting a machine shop to pull the last one (its more fun than I want) what will they expect? Finally the head is really greasy and gross, how much of the grease and horror will the shop expect me to take off and how much can I leave for the tank?
