Just maybe the carb float is sticking in a full bowl position. As you run the tractor there is just enough gas squeezing by the float needle valve. As you drive there is a demand for more gas than it can deliver, it stalls, and as you wait, enough gas dribbles in to start it up again. Check the float and see if it is binding in its up and down movement.
