Patrick, It's a good idea to have somewhat straight runs as that will allow the disc to be as efficient as it can be. During turns it is not cutting as designed whether a cross disc (no significant dead furrow) or an offset (creates dead furrow)If your lands are large you'll want to pick up and or close it on the turns because repeated running over the same ground on the head lands (turn area at end of field)will pulverize the soil there and create a whole new set of problems. As far as a garden is concerned I don't think it matters to much if it's a smallish area whether you disc it one way or another. Hope your garden turns out well!
